Hi again! Tonight, I didn’t get to go to the store…so I used what I had on-hand to create this Chicken & Stars Soup. Talk about “Chopped” on a budget…woah.
So, I pulled the chicken out of the freezer, let it defrost, and seasoned it with salt, and Badia Lemon Pepper. I also added some Herbs de Provence – the same seasoning that I use in my Chicken Pot Pie “Cupcakes”.
Then I put those chicken pieces in a sauté pan (on low-medium heat), and let them cook.
While those chicken pieces were cooking…I took out a large stock pot, and added approximately 3-4 cups of chicken broth, and 2-3 cups of veggie broth (unsalted, of course), along with some random veggies out of the freezer (corn, peas, and carrots). Then, I made some Pastina (the “stars” of the soup), according to package directions, and added that to the mixture as well. Then I seasoned the broth with some garlic salt, herbs de provence, a little more lemon pepper, and a PINCH of red pepper flakes.
Once they turned a little brown on either side, and subsequently cooked all the way through…
I then put them all on a cutting board, and cut them into bite-sized pieces…
And dumped them into the stock pot…starting to look YUMMY!!!
Once everything was in the pot, I let it simmer for about 20 minutes to get all those delicious flavors together…so GOOD.
Once it was done, and I was satisfied with the flavors, it was time to enjoy it!!
Like I said, this was a creation from the stuff I already had on-hand, so I didn’t have any tasty baguette or some toast to dip in the soup, but I would definitely suggest it for anyone that’s trying this soup (or for me, when I do this again).
